As a person with bipolar, we're not always cold and distant. Sometimes it is just really difficult to make heads or tails of a situation, just say you'll be there for her if she needs you and try not to work yourself up over it.

I'm so thankful for all your replies! I honestly haven't been trying to manifest a better relationship with her just because I'm trying to get myself back to baseline. I felt pretty blind sided by the whole situation. A week of bliss and then, well this. I've just been concentrating on letting go and accepting the situation as it is.
Now I may have had a revelaton regarding limiting belief. I do feel anxious when I try to envision what I want. That's it right? That's what I need to work on is that feeling? Do I just ask myself why whenever I feel this way?

Yes, I would try to figure out the root cause of your anxiety surrounding this desire. This anxiety could be the reason why you are manifesting a situation where she is being distant.
